Add all the ingredients to a saucepan and cook on medium-heat until thickened to a custard consistency and gelatinous texture, about 10 minutes. Pour the filling over the crust and place back in the oven to bake until the edges are lightly browned, about 15 minutes. Let cool for 30 and then transfer to the fridge to chill-out. And that’s it, our vegan lemon bars are ready to be devoured.
